I have days when spending more than 20 minutes in the kitchen is my worst nightmare! On days like that, a salad is the fail safe way to go.
Salads are not great just because they are simple, but also because they are a great way to eat multiple vegetables (and fruits) in one go. That way, you get a huge dose of nutrients in one plate! Always try to put as many colours of fruits and vegetables as possible to ensure you get a variety of antioxidants.
This recipe requires minimal cooking – in fact, most of the time is spent prepping the vegetables.
- 75 g pasta
- 10 cherry tomatoes sliced
- 100 g mixed salad leaves
- 1/2 small avocado
- 80 g sweet corn steamed
- 80 g peas steamed
- 1/4 small red onion diced
- 1/2 medium cucumber sliced then halved
Cook pasta according to the instructions on the packet then allow to cool slightly.
While the pasta is cooking, prepare all the other vegetables and assemble them in a bowl.
Drizzle with a little olive oil, himalayan salt and a squeeze of lemon. Mix thoroughly and enjoy.
